Thanks for making me sound intelligent! ;) I agree completely with your assessment at the end re: finding the right entrepreneur to fit the existing space. That is absolutely what happened with Station Street (the hot dog shop). I do think that there was a fairly substantial renovation at Union Pig & Chicken (the barbecue 'joint'), it looks nothing like the barbecue restaurant that was there before. Next time you're in town, I'll take you there!
BTW, I have to correct you on the hot dog you had. It was a Devil Dog, which has egg salad, crushed potato chips, scallions, and hot sauce. It's my favorite dog there - I refer to it as The Fourth of July on a Bun.
